A bayonet gas connection used for a gas cooker can usually be used for a new gas cooker but a built in gas hob will need to be fitted using rigid pipe (in most circumstances), not a flexible hose that connects free standing cooking appliances.
A gas cooker or hob will usually take between 30 minutes and 2 hours (in my experience).
It can take more if there are problems but this is the average time span for me. Both gas appliances need a tightness test taken before and after fitting the cooking appliance to ensure there are no gas leaks.
